Manchego D.O.P. is a pressed-curd cheese made from the tangy, fatty milk of Manchega sheep, exclusively in their native provinces of Albacete, Ciudad Real, Cuenca, and Toledo. This region, located due south and southeast of Madrid in La Mancha, has been a historical home for shepherds and cheesemakers for thousands of years. Aged for 6 months, this Manchego exhibits a firm texture with a slight crumble and concentrated flavor. Crunchy salt and calcium crystals gradually develop throughout, making it an excellent grating cheese that melts seamlessly.
